The acronyms are confusing on purpose, I think. Let me strip them down to what actually matters for a store owner, because the work underneath them overlaps more than the vendors selling each one want you to know.
What is SEO, really?
Search engine optimization is getting your store to rank in a list of links on Google or Bing. You win by matching keywords, earning backlinks, and keeping your site fast and crawlable. This is the game everyone's played for twenty years.
It still works. Search still sends real buyers. But the traffic is shrinking as AI answers eat the top of the page. Semrush and other analysts have tracked zero-click searches climbing for years. People get their answer without clicking. That's the crack SEO alone can't fix.
What is AEO?
Answer engine optimization is getting your store cited when an answer engine responds to a question. Think Perplexity, Google AI Overviews, and the answer boxes that name sources. You win by structuring your data so the engine can read it, and by answering questions directly enough to be quoted.

Which one should I focus on first?
